I have neglected the blog a bit, but I have been busy with pulmonary rehab and other things. I had some spare time this week, so I decided to put my not-so-great baking skills to use.
I had an urge last Monday to bake. I cook all of the time and I feel comfortable in that role. I cook dinners most nights and I enjoy trying new recipes and seeing where I can take my culinary skills. Baking, on the other hand is not my forte, nor have I ever been that interested. It might have something to do with the fact I don't like sweets as much as I love salty snacks!
Monday is when that changed. I had an urge to bake chocolate chip cookies. I decided to start with something easy and go with the Nestlé Toll House recipe, straight off the back of the chocolate chips bag. I was really nervous because I know baking requires exact measurements, and in cooking I usually take liberties with my measurements. Well, the cookies turned out great and I'm pretty sure Tom has been having them with breakfast, lunch and dinner. I forgot to mention, my husband is a desert-a-holic. It is another reason I don't keep sweet things in the house. He devours ice cream, cakes, and pies like it is his job.
I also had ripe bananas sitting around and I had a craving for banana nut bread. My Grandma used to make it when I was a kid, I knew I had to get the recipe and try it for myself. That also turned out well. I have been shoving my face with banana nut bread with cream cheese on top since making it!
These last couple of weeks my health has been getting a bit worse. I'm coughing more, tired all of the time, and my lungs are feeling heavier. Pulmonary rehab has been good for me, but it is definitely making me more tired overall. But, the tiredness didn't stop me from celebrating my anniversary early with my husband.
On Saturday night, Tom and I went out to celebrate our anniversary. Our true anniversary is tomorrow, but I wanted to make a night of it on Saturday. We went out in Oakland to try a southern style restaurant. It was great, Tom enjoyed shrimp and grits, cocktails galore, and some amazing desert. I was salivating for their banana pudding, I obviously have a love for bananas! We had a lovely evening together, and I'm glad we get to celebrate again tomorrow.
As of right now, I have no other updates on my health. I'm holding off on being listed for a transplant because I am not mentally prepared yet, and I have a few things to sort out before I officially put myself on the list. I will definitely be updating the blog when I do put myself on the list.
Have a great week everyone!
Total NOM. Lucky Tom having you make this sort of stuff :D
ReplyDeleteHappy anniversary to both of you!
Really sorry to hear that your health has got worse recently. I just googled 'pulmonary rehab' - this blog is quite the education. Good luck with your journey to having yourself listed for a transplant. Since first reading your blog I've tried from time to time to imagine how you must feel anticipating such a huge operation that will relieve the symptoms of this illness that you have struggled with all your life, yet which must itself be a frightening prospect. I can't even begin to imagine what that must feel like. I'm guessing you must have felt pretty much every possible emotion about it. I'm looking forward to following your story further and seeing your blog posts one day turn to telling us all how much better you're feeling with your new lungs. xxxx
